The addition of chia seeds to our overnight oat recipes is non-negotiable for us. They don’t just add a fantastic texture, creating a wonderfully thick and satisfying consistency; they also deliver a significant nutritional boost. Chia seeds are a powerhouse of fiber, protein, Omega-3 fatty acids, and calcium, transforming your breakfast into a truly wholesome and energizing meal.

Unlock the Full Potential: Ingredients Spotlight & Pro Tips
The Wholesome Goodness of Steel Cut Oats and Pumpkin
Steel cut oats, also known as Irish oats or pinhead oats, are minimally processed oats that retain more fiber and nutrients compared to rolled or instant oats. Their chewy texture and nutty flavor make them a superior choice for a satisfying breakfast. Paired with pumpkin puree, these oats become a nutritional powerhouse. Pumpkin is rich in Vitamin A, Vitamin C, potassium, and fiber, contributing to eye health, immune function, and digestive wellness. The natural sweetness and vibrant color of pumpkin also make it a delightful addition to any fall recipe, offering a distinctively earthy and comforting flavor profile.
The Nutritional Boost from Chia Seeds
While often added for texture, chia seeds are a nutritional powerhouse in their own right. These tiny seeds are packed with dietary fiber, which aids digestion and helps maintain satiety, keeping you fuller for longer. They are also an excellent source of plant-based protein, making these oats a great option for vegetarians and vegans. Furthermore, chia seeds boast a high content of Omega-3 fatty acids, crucial for heart health and brain function. Their ability to absorb liquid and create a gel-like consistency adds a delightful creaminess to the oats, enhancing the overall eating experience.
Achieving Perfect Slow Cooker Oats Every Time
To ensure your Slow Cooker Pumpkin Steel Cut Oats turn out perfectly creamy and without any burnt edges, a little trick can go a long way. Generously spraying your slow cooker with cooking spray is the first step. For an even more foolproof method, consider using a “water bath” technique: place a large, heat-proof dish inside your slow cooker, add all your oat ingredients into this dish, then fill the slow cooker itself with water around the dish, leaving about 2 inches from the top of the inner dish. This indirect cooking method prevents sticking and creates a wonderfully even consistency. Remember that it’s normal for chia seeds to rise to the top during cooking; simply give your oats a good stir before serving to reincorporate them and achieve that desired creamy texture.

Ingredients
- 1 cup steel cut oats
- 2 tablespoons chia seeds
- 2 teaspoons pumpkin pie spice
- 2 teaspoons ground cinnamon
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- 2 1/2 cups water
- 2 cups milk (I used unsweetened almond milk)
- Additional maple syrup, toasted pecans, chia seeds, chopped apple or chocolate chips (for topping, if desired)
Instructions
-
Generously spray your slow cooker with cooking spray. Place all ingredients into the slow cooker and cook on low for 8 hours or overnight. Note: To prevent the edges from burning, you can place a large heat-proof dish into the slow cooker and add all ingredients into this dish. Fill the slow cooker with water around the dish until it’s 2 inches from the top of the dish (water bath method).
-
It’s normal to see chia seeds all over the top of the oats after cooking. Simply stir the oats well before serving. Serve with your choice of desired toppings. Enjoy!
Notes
- These oats are intentionally not overly sweet, allowing you to control the sweetness level by adding a drizzle of maple syrup at serving time. Add more sweetener during cooking if you prefer your oats on the sweeter side.
- Store any unused oats in an airtight container in the refrigerator. To reheat, microwave or warm them on the stovetop with a splash of additional milk until heated through.
